The old Colome winery was founded in 1831, probably by the Spanish Governer of Salta, Nicolas Severo de Isasmendi y Echalar. His daughter Ascencion, who married Jose Benjamin Davalos, introduced in 1854 from France pre-phylloxera Malbec and Cabernet Sauvignon vines to Colome. Three vineyards of 10 acres/4 hectares, dating from this time still produce grapes. Colome is considered the oldest existing winery in Argentina.
The climate in the Calchaqui Valley is extremely dry, it rains infrequently, totalling 5-12 cm (2-5 inches) per year from December to the end of February. The microclimate is exceptionally suitable for the organic cultivation of the vines. The nights are cool and the daytime temperature ranges on average between 77-87 degrees F (25-31 degrees C).
Colome is committed to the implementation of Biodynamic agriculture. This allows for an efficient use of resources of every local agro-ecosystem and available nutrients. The organic Biodynamic fertilizing system is more balanced when fertilized with organic material, compost.
