The Salentein estate is one the rich estate in history as it is vineyard characher. Ths goodwill was the work of the indigenous people. The historical roots that reach back to the 17th Century. In the past the propery was part of an estancia called De Arriba, which blonged to the Order of Jesuits. Some 1500 meters above the sea level, lie the ruins of Casa Grande, an old farmhous. The wonderful winery, designed for both structure and purpose in the shape of a cross, allows for modified gentle handling of the grapes, reducing the distance wine needs to be moved between winemaking steps.
Each of the wings is a small winery with two levels—a floor level that houses stainless steel tanks and French wooden vats for fermentation and storage space, and an underground level for aging wine in oak casks. The two levels allow wine to flow from the tanks to the barrels by a traditional gravity transfer system. The four wings converge in a circular central chamber, which resembles an amphitheater and was inspired by ancient classical temples.
Beyond the functionality, the shape and materials of the winery also honor the religious roots of the valley. Jesuit missionaries developed there in the 16th century and civilized some of the first vineyards in the region. Ancient Andean population, whose offerings to the goddess of richness and life were presented in holes dug in the earth, inspired the winery’s underground levels for aging wine.
